  • A white 'bloom' (cocoa butter or sugar surfacing) is harmless — the chocolate is still fine to eat.

  • Any mould, or a sticky/slimy surface, means throw it out.

When in doubt, throw it out — the cost of a spoiled meal isn't worth the risk.

Best way to store chocolate

Keep chocolate somewhere cool, dark, and dry — ideally 15–18 °C (60–65 °F) — not the fridge, where condensation and fridge odours spoil it. Wrap it airtight, away from strong-smelling foods.
